Chocolate-n-Toffee Cookies

Here is a modified Chocolate Chip recipe which is basically the same as my previous blog entry but with toffee bits added to the mix. I also chose to cut the recipe in half due to the time needed to bake the cookies.

Ingredients:
1 Cup Butter
1 Cup Granulated Sugar
1 Cup Brown Sugar
2 Large Eggs
1 tsp. Vanilla Extract

2 1/2 Cups Oatmeal (not Quick Oats; measure pre-blended)
2 Cups Unbleached Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt

12 oz. Ghirardelli 60% Unsweetened Chocolate Chips
8 oz. Heath Toffee Bits
Mix wet ingredients including sugars separately from the dry ingredients. Once you have the wet ingredients mixed with a blender add the dry mixed ingredients. I prefer to blend the Oatmeal to a fine consistency before adding it to the mix. Put in the chips and toffee bits last.

Bake for 10 minutes at 375 degrees F.

(yields ~48 cookies)
