Sugar Cookies

Here is my ultimately simple Sugar Cookie recipe.

Ingredients:
3/4 Cup Shortening (Crisco Butter Flavor)
1 Cup Granulated Sugar
2 Large Eggs
1/2 tsp. Vanilla Extract
2 1/2 Cup Unbleached Flour
1 tsp. Baking Powder
1 tsp. Salt
Normally I like to mix in shortening or butter in with sugar, eggs, and flavoring followed by the dry ingredients. Depending on how large the batch is, one may want to mix the dry and wet ingredients separately and then add the dry mixture to the wet mixture.

After the batch is mixed well you can choose to frigerate it for a couple hours before using a cookie dough scooper (or spoon) to put it on a cookie sheet for baking. If you are in a rush, no worries as the cookies still turn out great w/o doing this step. I do like to use those cookie sheets with a pocket of air and parchment paper to help with even cooking.

Bake for 6-8 minutes at 400 degrees F.

(yields ~24 cookies)
